A refreshing chicken salad with sweet peas, fresh mint, and a light dressing.

Ingredients:

  • 2 cups cooked shredded chicken
  • 1/2 cup fresh or frozen peas
  • 1/4 cup chopped fresh mint
  • 1/4 cup sliced almonds
  • 1/3 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. In a bowl, mix the Greek yogurt, olive oil, lemon juice, salt, and pepper.
  2. Add chicken, peas, mint, and almonds. Toss to combine.
  3. Serve on toasted bread, lettuce wraps, or as a side dish.
